SWEET AND SOUR CORN AND CABBAGE SOUP



The vegan soup recipe for a warm and tasty first course. Good morning!! Today I would like to share with you a very good recipe made with corn and cabbage. With the arrival of the cold weather, there is nothing better to give us warmth and health.

But let's move on to the recipe:

Ingredients

4 corn cut into pieces 
Half a cabbage
1 red pepper, cut into small pieces
1 yellow pepper, cut into small pieces
2 tomatoes
1 chopped onion
2/3 cup brown sugar
1/3 balsamic vinegar
4 cloves finely chopped garlic
4 star anise
2 cubes (21 g) chicken broth
5 cups water
3 tbsp olive oil or canola
a pinch of crushed chili

Preparation

Cut the cabbage lengthwise to get long slices. In a large saucepan with lid, sauté the onion and garlic for about 2 minutes. Add the cabbage and cook for 5 minutes with the lid. Stir in all other ingredients and simmer over medium heat for 20 minutes. Let stand for a few minutes and then serve warm or at room temperature.
