GOLDEN FRIED ANCHOVIES



The golden fried anchovies are a simple and quick appetizer or second course, a traditional recipe to enjoy this blue fish, delicious and rich in nutritional qualities. Whether anchovies, or sardines, this type of fish is particularly suitable to be cooked fried. Anchovies are in fact often little considered and little used in the kitchen, yet it is a very important food in a balanced diet, they are very simple to clean and cook and, what does not hurt, they are also cheap. A Neapolitan recipe much loved and tasty. You just have to have a little patience to clean the anchovies but if you have fishmonger friends you can always ask to do it for you as I did. In the Neapolitan dialect they are called anchovies 'ndurat e fritt'. An inexpensive recipe that will make fish lovers like me happy. They are found on the market all year round, except for the harshest months of winter. The best time to enjoy its meat is in spring, during the reproduction period; but it is also excellent in the months of July and August.

Ingredients

400 g Anchovies
2 Eggs (large or 3 small)
Salt and Pepper to taste
Flour to taste
Seed oil to taste

Preparation

As I anticipated before cleaning the anchovies it takes a little patience and attention let's see what to do. Remove the head of the anchovies and the central thorn trying not to detach the two parts, do it gently. Wash the anchovies well under running water and dry them on a clean kitchen towel. Take 2 dishes in one put the eggs with salt and pepper and in the other the flour. Before flouring the anchovies, heat the oil in a non-stick pan. Pass the anchovies first in the flour and then in the previously beaten eggs and fry them a few at a time. Turn the anchovies only when they are golden brown, remove them when cooked and place them on absorbent paper to dry. Continue until the end of the ingredients. Season the fried anchovies with salt and pepper. Serve the golden anchovies fried and warm or cold are good anyway and enjoy your meal! Flour them at the moment and do not do it in advance! Use fresh anchovies!
