Split pea soup 



The split pea soup is a tasty and hearty soup but composed of a few simple ingredients, a dish to be enjoyed steaming during a cold winter evening. If you want, you can make the broken pea soup even richer by adding 10 minutes before the end of cooking the short pasta or rice or accompanying it with slices of toasted bread. Broken pea soup is a very good soup with the typical flavor of peas, but with the pleasure of not feeling the skins in your mouth. They are less caloric than other legumes, but no less nutritious. Broken peas are also known as dried peas. 

They are called split because they are open in two parts and no longer round like fresh peas.

INGREDIENTS

Peas broken, 250 gr
Smoked bacon, cubed, 70 gr
Onions1 small
Carrots1 small
Celery1 rib
Garlic1 segment
Extra virgin olive oil, 3 tablespoons
Vegetable broth, 1 lt

PREPARATION

To prepare the broken pea soup, start by soaking the broken peas in plenty of cold water and leave them for at least 5 hours. Finely chop the carrot, celery and onion and put them to fry with garlic in extra virgin olive oil in a large pan. Brown them for about 10 minutes and then add the diced bacon (if you prefer you can add the bacon in a single slice) and brown it well. Rinse the peas well under cold running water and add them to the pan, stir to flavor and then cover the peas with the hot vegetable broth. Cover the soup and cook over low heat (it will have to simmer slightly) until the peas are tender and begin to unravel, it will take about 60 minutes. If you want, to get a more substantial dish, you can add pasta (ditalini, broken spaghetti etc.) or rice to the soup!
