Pappardelle with Mussels and Prawns
Pappardelle are certainly a traditional national dish, even if often combined with flavors of land rather than sea. How many times have you ever thought "what can I prepare for dinner?". Here... Pappardelle is an easy dish to prepare and that goes well with everything, both with fish and meat condiments. I wanted to prepare a plate of pappardelle with the scent of the sea, seasoning them with the strong flavor of mussels and the delicate one of shrimps. Here is the recipe.
INGREDIENTS
400 Gr Pappardelle
250 Gr Mussels
250 Gr Shrimp
500 Gr Cherry tomatoes
1 Clove of garlic
Extra virgin olive oil to taste
Parsley stalks
1/2 glass White wine
Salt to taste
Crustacean
1 spoon Butter
1/2 Onion
1/2 Leek
Shrimp heads
1 glass White wine
1 Lt Water
1 Clove of garlic
GUIDELINES
pappardelle and condiment
Take a pan and put a little oil, a clove of crushed garlic and a few branches of parsley cut into small pieces. Sauté the garlic a little until it becomes golden. After a few minutes, pour the cherry tomatoes into the pan and brown them for a few minutes. Then add salt and 1/2 glass of white wine. Then add the mussels (previously cleaned) and shrimp and cook a little. Meanwhile, put the pot for pasta and cook your pappardelle always tasting them until the pasta is al dente. Once al dente, drain your pappardelle and pour them into the pan with the sauce. Sauté the pappardelle and serve hot.
Crustacean
Put the butter, onion, leek, a clove of garlic in a pan and brown it.
Add the shrimp heads, the glass of white wine and let it evaporate.
Add 1 liter of water and cook for about an hour.
Add this broth to risotto or pasta.
