Clam chowder



Clam chowder is a unique dish, complete and incredibly tasty. If like me you love clams, do not miss this recipe that will amaze you not only with the result but also with its extremely quick and simple preparation, to give you an idea of the times, I prepared this clam chowder last Sunday in just under 15 minutes, the time to set the table and the soup was ready on the table! Bring to the table all the taste and flavor of the sea with clam chowder, a delicious recipe to be proposed on all occasions, in the weekly menu for the whole family as in the most refined dinners, and special occasions. 

Ingredients
1 kg Clams
2 cloves Garlic
5 tablespoons Extra virgin olive oil
10 cherry tomatoes (approx.)
Fine salt (very little)
80 ml White wine
Parsley (chopped) to taste
Black pepper (ground) to taste
4 slices of bread (to fry)

Preparation

Let's start soaking our clams, let them soak for a while so that, if there was sand, they have time to clean up well. Wash and remove the ends of the cherry tomatoes and then cut them into small cubes and set them aside. In a large saucepan put oil and one of the two cloves of garlic, fry quickly and as soon as the garlic is golden, add the cherry tomatoes (pay attention to oil splashes). Stir for about a minute, then deglaze with white wine and let it evaporate for about another minute and finally add the clams. After pouring the clams into the saucepan, close well with a lid and let it cook over high heat for a couple of minutes, until all the clams are well opened and have released their liquid. Continue cooking for about another minute, but without a lid, just enough time to shrink the broth a little. Now turn off the heat and season the clam chowder with the remaining clove of garlic (finely chop it) and lots of chopped parsley, for those who like it I am also fine with ground black pepper. Serve the clam chowder with fried bread croutons, or if you want to avoid frying, baked croutons and... Enjoy your meal!

One more tip:
If you want to make your soup more varied you can also add mussels, following the exact same procedure. For lovers of spicy flavors, you can also add chili.
