Broccoli salad with bacon



With their strong flavor and captivating texture, broccoli and bacon are a perfect pair. Combined with raisins and walnuts, then, they become a superlative duo. Try this recipe for an easy and tasty winter salad, to be enjoyed hot at home or cold in the office, for an energetic and tasty meal.

INGREDIENTS

To prepare winter salad
Shelled walnuts 40 g
Slices of bacon 6
Broccoli florets 600 g
Raisins soaked in warm water for 20 minutes
1 red onion, chopped

To prepare the dressing
Greek yogurt 60 g
Mayonnaise 50 g
2 tablespoons wine vinegar
1/2 tablespoon sugar
1/4 teaspoon freshly ground pepper
1/2 teaspoon salt
1/8 teaspoon cayenne pepper 

PREPARATION
How to make broccoli winter salad with bacon, red onion, raisins and walnuts. In a hot pan, toast the shelled walnuts for 2 minutes. Keep aside. In the same pan, cook the bacon for 10 minutes, until crispy. Once ready, place it on a plate lined with kitchen paper, dabbing to dry.
Without changing the pan, cook the onion and broccoli for a few minutes. Vegetables need to soften slightly, remaining crispy.
In a bowl, put together broccoli, onion, bacon and toasted walnuts cut into coarse pieces. Drain and squeeze the raisins. Add to the salad. In a bowl, mix all the ingredients to prepare the dressing with which to season the winter salad with broccoli. Season with sauce, stirring well. If necessary, correct salt and serve the winter salad, as a cold side dish.
