Today I want to talk about fried bread with egg. I have many memories of this dish, my grandmother and mother often did it and us children were always very happy to eat it. In a large enough bowl, put the shelled eggs and beat them with a fork. Cut slices of stale bread about 2 cm thick. Put milk on a plate and just wet them. Put a large pan with oil on the heat and allow to heat. As soon as the oil has reached the right temperature, dip the slices of bread in the egg only on one side and fry. As soon as the bread turns golden, take it out with the help of a fork and dip the opposite side in the egg. Now leave to brown, adding salt, according to your taste. Once the slices of bread are golden, remove them from the pan and put on a sheet of absorbent paper to lose the frying grease. For slices richer in egg, my advice is to brown it just on both sides, then, using a fork so as not to burn, pass in the egg a second time and fry again. You will get a very soft and very tasty bread. If it does not wear immediately, store in a container with lid. You just have to enjoy this fantastic and cheap dish. The Neapolitan fried bread is an improvised delicacy, probably coming from the poor cuisine of Campania, but genuine and prepared with very simple ingredients.
