Bacon Harvest Chicken Skillet
Here is a different way to prepare chicken in a pan, it is chicken wrapped in bacon. The idea was given to me by my butcher who sells the pieces of chicken already cut, without skin, flavored with rosemary and wrapped in slices of bacon, obviously sells them at twice the price compared to simple chicken, so I prepared them myself. When baked the pieces of chicken are crispy all around and retain their softness inside and are a great idea for a mid-week dinner.

Chicken rolls and bacon... A simple and quick recipe to prepare, a dish that is suitable both as an appetizer and as a second course, also ideal for a dinner-buffet because it is also good cold, the bacon keeps the chicken soft .... it's yummy!! With the quantities described below you get from the roll about 10 slices, it can be served to two people as to four, it also depends on the side dish you want to match, the mash, grilled vegetables or a mixed salad, in short, it is subjective, not everyone eats the same quantities, don't you agree? Now we go to the preparation even if it takes longer to explain it than to do it, and then we do not say how long it takes to eat it 😉
Ingredients for 3 people
1 slice of thin chicken breast
100 gr of thin bacon
aromas to taste
300 gr potatoes
20 gr butter
90 ml milk
salt, pepper, nutmeg to taste
Preparation
On a sheet of parchment paper spread half of the bacon slices, one attached to the other, place the slice of chicken breast rather thin, sprinkle the chicken with black pepper and aromas to taste, dried or fresh, cover with another layer of bacon. At this point, using the same parchment paper, wrap the roll tightly, pass on aluminum foil, wrap it and close it well, sealing it. Put the roll (wrapped with aluminum foil) in a non-stick pan and brown for about 5 minutes and then bake for 10 minutes to finish cooking. If you have decided to prepare the mash: peel the potatoes and steam them. Still hot, crush and collect in a saucepan, put on the fire, add the other ingredients and stir to avoid lumps and obtain a smooth and homogeneous puree. As soon as the roll is completely cold, open the aluminum foil and cut into slices, place on the plate accompanied by the mash potatoes.
Recommendations
It is important to wet the meat with the cooking stock during the stay in the oven as the white meat of the chicken tends to dry out.
Preservation
Store your chicken melts in a tightly closed plastic container and with the cooking sauce placed in the refrigerator for a maximum of a couple of days. If you have used fresh ingredients you can also freeze the chicken.
