Here's how to prepare the orange and fennel salad, a quick and easy recipe to prepare a salad different from the usual. Clean the fennel by removing the hardest outer leaves. Cut the fennel into 4 parts and wash them. Slice the fennel with a knife or with a mandolin. I prefer the mandolin because I can make thinner slices. Take the orange and cut the 2 ends. With the knife cut the outer peel peeling the orange. At this point you can decide whether to cut the peeled orange into slices or cut the wedges one by one.
