Lasagna alla Bolognese

1 Box of Lasagna
150 g bacon
4 ounces ground pork
4 ounces ground beef
1 3/4 ounces carrots
1 3/4 ounces onions
1 3/4 ounces celery
4 tablespoons extra virgin olive oil
300 g tomato puree
1/2 cup tomato paste
1/3 cup dry red wine
Salt and pepper to taste
Water (about 1 cup) as needed
5 1/2 tablespoons butter
5 tablespoons flour
6 cups milk salt to taste
Nutmeg to taste
2 tablespoons butter
1 cup Parmigiano-Reggiano cheese, grated
The lasagna alla bolognese is a festive dish that can also be prepared in advance, placed in the freezer and when needed, thawed and baked.
1) Heat the oil and butter in a saucepan with add the chopped onion and brown it gently, then add the chopped celery and carrot and brown these too. Add the bacon and, after a minute, the minced meat. Sauté over high heat, stirring constantly and shelling with a spoon. When it changes color, add coarse salt and fresh pepper.
2) Deglaze with the red wine, which you will let evaporate. Add the tomato puree and the 1/2 cup of concentrate. Stir and let it boil, then cover and cook for about two hours over very low heat.
3) Boil the lasagna, a few at a time, in boiling salted water to which you have added a tablespoon of oil.
4) Grease a baking dish, arrange 2 sheets, season with a little of the meat sauce, and a sprinkling with Parmesan; cover with 2 more sheets, season them in the same way and proceed like this until you run out of pasta and condiments.
5) Finish with the sheets of lasagna add the parmesan and the remaining butter; put the lasagna in the oven at 180 ° C for about 30 minutes.
6) After this time, you can finally serve your tasty lasagna alla bolognese. Bring it to the table directly.
