 Fried whitebait




The fried whitebaitis prepared by mixing the flour with spices and salt to flour the fish and frying it little by little in plenty of oil. At the end of cooking, dry with kitchen paper and serve hot. 
Here are the steps for fried whitebait.

Crispy and tasty fish but careful not to cook them too much so as not to make them become woody.

What you are about to know is a Sicilian dish: its name is "sciabacheddu", from sciabica, the net in which the catch of the day was collected. To make it you have to get only small and very fresh fish. Succeeding in the intent is simple even if you are not an expert in the kitchen, but the result will be greatly appreciated. You will conquer even the most refined palates!

Ingredients
Flour 120 g 
Curry1 tsp 
Ginger1 tsp 
Pepper1 tsp  
1,1 kg Peanut oil to taste 
Lemon to taste

Preparation
Mix the flour, spices and salt in a large bowl. Cover the fish with tasty flour and remove any excess. Heat the oil in a large, heavy-bottomed pan until it reaches a temperature of 190°C. Fry a few whitebaits at a time for 2-3 minutes, until the fish is golden and crispy. Dry them on absorbent kitchen paper. Serve after sprinkling with a few drops of lemon, garnish with lemon cut into wedges and bring to the table hot.

Recommendations
The spicy coating of the whitebait gives this dish a crunchy texture.
