Pizzas with olives and cherry tomatoes
Pizzas with olives and cherry tomatoes are a very tasty and fragrant leavened product. Soft and very simple to prepare. With a few tricks you will be able to obtain delicious pizzas that will conquer the palate of adults and children. Let's see what we need for the preparation of the Pizzette with olives and cherry tomatoes.
Ingredients
680 g flour
1 tsp sugar
5 g salt
480 g water
extra virgin olive oil
basil
oregano
300 g cherry tomatoes
100 g green olives
5 g fresh brewer's yeast
Preparation
Start the preparation of the pizzas with olives and cherry tomatoes from the dough. Pour the water into a container. Add 5 g of fresh brewer's yeast, a teaspoon of sugar, 20 ml of extra virgin olive oil and stir with a spoon until the yeast is completely dissolved. Add the flour a little at a time and mix everything with a spoon. Since it is a high-hydration dough, you will be able to work everything with just a spoon. When you have obtained a homogeneous dough, cover the container with plastic wrap and let it rise for 20 minutes. After the time necessary for rising, with wet hands make the folds to the dough. Take the ends and fold them towards the center (Folds in bowl). Repeat the process 2 more times 10 minutes apart. After making the folds for the third time, cover with tissue paper and let rise for 2 hours. When the dough has doubled in volume, transfer it to a floured pastry board and divide it into portions of 70 g. Form the pizzas and place them in a baking pan brushed with oil. Cover them with a cloth and let them rise for another 30 minutes. When they have risen, add extra virgin olive oil and finely chopped basil. If you like, you can also add dried oregano. Place the halved cherry tomatoes and olives on the pizzas, pressing them to make them adhere to the dough, then bake in a preheated oven at 250°C for about 15 – 20 minutes. When cooked, take it out of the oven and enjoy the pizzas with olives and cherry tomatoes together with your diners.
