Sicilian tomato salad
We are talking about a dish that is definitely in the top ten of the most cooked in Italy. Prepared dozens and dozens of times a year in all families and that everyone, absolutely everyone knows how to make very well. And yet... And yet we propose this tomato salad with the conviction of being able to give some indications that were once the heritage of all Italians, and that today many (for example those born and raised in the city, that is the majority) have forgotten or have never known. The ideal dressing for an excellent tomato salad is extra virgin olive oil. Period. All varieties are fine, even the very tasty ones: in this case there is no better or worse, there are only different taste experiences. Even the aromas are best chosen among those with the most distinct flavors. The best aroma (as Neapolitans know well) is garlic, just be careful not to let it become dominant. Many recommend not putting it directly in the salad, but rubbing it on the surface of the salad bowl. Leeks, shallots and onions are also good, the latter better if new or in the form of spring onions. Pepper is a must in traditional recipes. Among the aromatic herbs, the favorites are basil, tarragon, oregano and thyme. The first two only fresh, oregano and thyme also dried. We also recommend the combination of oregano and mint, but not everyone agrees. Here is the recipe, very simple and delicious!
Ingredients
500 g Cherry tomatoes
1 Red onion (small)
A few sprigs Basil (fresh)
Extra virgin olive oil
Salt
Black pepper
Preparation
First wash the cherry tomatoes well and cut them into quarters. Remove the outer layers from the onion and slice it finely, then separate the various layers with your hands. Arrange the cherry tomatoes in a large salad bowl with the onion. Chop a few leaves of fresh basil and add it to the other ingredients. Complete with extra virgin olive oil, salt and black pepper and mix well, then decorate with some fresh basil leaves and serve. Enjoy your meal, your Sicilian tomato salad is ready to be devoured!
