Samosa (Indian roll of potatoes, peas and spices)



An appetizer with an oriental flavor that makes us savor a little of the taste of India... I'm happy to present you my version of Samosas! Vegan and lactose-free dish.

Ingredients 

1 potato
1 handful of peas
1/2 cayenne pepper
1 teaspoon of Curry
1 teaspoon of Turmeric
10 coriander seeds
1 clove of garlic
Ginger
Oil

Ingredients for the pasta

140 gr of flour
40 gr of oil
30 gr of water
1/2 teaspoon of Cumin
1/2 teaspoon of Turmeric

Method

In a container put the flour, oil, water, turmeric and cumin seeds. Mix everything until you get an elastic dough (if it is too thick or too liquid, add flour or water accordingly). Let it rest for 30 minutes. Boil the potato and then remove the skin. In a mortar, crush the garlic clove, coriander seeds and ginger. In a pan, heat the oil, add the mixture obtained in the mortar and the chili. Sauté for about 30 seconds and add the curry, peas and turmeric. Sauté the mixture, crushing the peas a little with a ladle, until everything becomes sienna brown (in short, a mixture of brown and red), then remove the pot from the heat. In a container, mix the potatoes and the contents of the pan. Mix everything and mix well. With the dough that has rested for 30 minutes, form disks to form the samosas. They can have the shape you prefer, I prefer to make them like ravioli. Now all that remains is to stuff them with our dough and fry them. Serve them hot and with sauces. I personally love them with hot sauce or Chinese sweet and sour sauce.

Tip
Be careful not to overdo it with the chili pepper so that they do not become inedible.
