First, put the potatoes in a pot, cover them with water, add a handful of salt and put them on the heat until cooked (30-40 minutes, depending on the size of the potatoes). In the meantime, remove the sausage from the casing and crumble it with your hands. Finely chop the onion. Fry the onion in a pan with a drizzle of extra virgin olive oil, then add the sausage and brown it. Peel the potatoes and mash them coarsely with a fork. Chop the fennel and add it to the potato puree. Put the pasta to cook in plenty of salted water. Take four to five ladles of cooking water, add some to the potatoes and start blending with the hand blender, adjusting salt and pepper if necessary. Add water until the cream is smooth and light enough, then add the fennel. Drain the pasta and brown over high heat for a few minutes with the sausage, then add the potato cream, mix everything well, remove from heat and serve.
