Preparation
To prepare the mixed fried fish and vegetables, first make the sauce: chop the capers, then pour the mayonnaise, lemon juice and chopped parsley into a bowl. Add the chopped capers and flavored with salt and pepper. Mix well and place the sauce in the fridge. Wash all the vegetables. Divide the pepper in half, remove the stalk and the internal seeds, then cut it into sticks. Peel and trim the carrots, then cut them into sticks as well. Now trim the zucchini, divide them in half lengthwise and remove the white inner part, then make sticks of the same size as the other vegetables. Set aside and prepare the batter for frying the vegetables: pour the flour and sparkling water into a bowl. Mix well with a whisk to obtain a smooth batter without lumps. Keep the batter in the fridge and prepare the breading for the fish: pour the flour and semolina into a baking dish in the same doses (about 150 g or what is needed for breading). Stir to mix the powders. Clean the shrimp: remove the head, remove the carapace while keeping the tail, then extract the black filament on the back. Now clean the squid and cut them into rings about 3 cm wide. Finally, cut the cod into bite-sized pieces, they should be about the same thickness as the prawns. Heat the seed oil for frying, it should reach about 180 ° C. Dip the prawns in the breading, then remove the excess flour with a sieve. Proceed in the same way for the squid and for the cod bites. Once all the fish is well floured, you can fry by dipping a few pieces at a time with a slotted spoon: start with the prawns, then drain them once they are golden brown. Let them drain on a tray lined with paper for fried food. Continue frying the cod and then the squid. Drain everything on the tray and set aside. Move on to the vegetables: dip them in the batter prepared just before and mix well. Also dip the vegetables in the hot oil and fry until the batter is crispy and golden, then drain on the paper for frying. Finally, salt to taste. The mixed fried fish and vegetables is ready to be served accompanied by the caper sauce!
