Baked Stuffed Artichokes



BAKED STUFFED ARTICHOKES are a really tasty and very easy second course to prepare. In the period when you can find fresh artichokes from your greengrocer, you can try to bring this recipe to the table that will surely be appreciated by your guests thanks to its intense flavor and also its lightness due to cooking in the oven.

Ingredients

6 Artichokes
400 g Minced veal
60 g grated Parmesan cheese
1 Egg
1 lemon
1 sprig of parsley
1 chili pepper
Salt
Pepper
Extra virgin olive oil
30 g Breadcrumbs

Preparation

 Start the preparation of the stuffed artichokes in the oven by cleaning the artichokes well and removing the toughest outer leaves, the tips of the leaves and the stem; As you clean the artichokes, immerse them in a basin full of water in which you have previously squeezed the lemon juice. Put the minced meat, egg and grated Parmesan cheese in a bowl; Also add the finely chopped parsley, crushed chilli, salt and pepper to taste. Mix everything well to make the dough homogeneous. Take the artichokes out of the basin one at a time and shake them well to get out all the water that is left between the leaves, then take the artichokes on the stem side and beat the leaves firmly on the work surface; By doing this, the center of the artichokes will open leaving a cavity that you will fill with the meat-based filling you have already prepared. Carry out this operation with all the artichokes until all the filling is used up and then place the artichokes in an oven dish with the filling side up. Sprinkle a sprinkling of breadcrumbs on the surface of the baked stuffed artichokes and then sprinkle them with a drizzle of oil. Place your stuffed artichoke dish in the oven and bake at 180°C for 15 minutes. When cooked, you can serve them on the table still hot.
