Ingredients
500 g asparagus
100 g speck (sliced)
Parmigiano Reggiano
butter
extra virgin olive oil
salt
Pepper
1 sprig thyme (to taste)
Preparation
Clean the asparagus by removing the hardest part at the bottom, and wash them in running water. For this preparation, I recommend that you cut them quite short, you can then use the remaining part of the stem to prepare a sauce for pasta or risotto. Boil the asparagus in boiling salted water for about 8-10 minutes. They will need to be tender but still maintain some consistency. Drain them and stop cooking by quickly passing them in cold water. Group the asparagus into bunches of 4 or 5, which have more or less uniform length. Wrap each bunch with a slice of speck.
