Pumpkin tartare, with prawns, lemon & thyme
Shrimp tartare with pumpkin is a truly irresistible appetizer: shrimp tails (or prawns) cleaned and cut with a knife, flavored with oil, parsley and lemon zest, thyme and served raw. The trick to a good result is not to add lemon juice in the preparation phase, only once on the plate! Here's how to do it.
Ingredients
8 Prawns250 g PumpkinLemon, thymeExtra virgin olive oil to taste
Procedure
Clean the prawns and remove the intestines with the help of yourself. Cut them into small pieces, put them in a bowl and add a few sprigs of lemon thyme and a drizzle of oil. Let them marinate for about 30 minutes. In the meantime, heat a drizzle of oil in a pan and add the pumpkin cut into small cubes. Cook it for about ten minutes and then serve. Place a pastry cutter in the center of the serving plate, add some diced pumpkin and level with the back of the spoon. Add the marinated prawns and run to the table that is already ready 🤤
