Winter salad
The recipe for my winter salad prepared with cabbage, apple, fennel, peanuts and apple cider vinegar: fresh, light, tasty and nutritious. Salad is also a pleasure in winter and, like summer salad, it can be fresh, light, tasty, nutritious, satiating, purifying, as long as it is prepared with seasonal vegetables: for example, cabbage, radicchio, pumpkin, endive, perhaps enriched with fresh and dried fruit if you want to add sweetness and crunchiness.
Ingredients
100 g purple cabbage
100 g green cabbage
40 g salted roasted peanuts
20 g apple cider vinegar
1 fennel
1 Green Apple
1 Small Red Apple
extra virgin olive oil
salt
Pepper
Procedure
For the winter salad recipe, peel the green and purple cabbage and cut them into strips. Wash the apples and fennel well and cut everything into thin slices. Prepare a vinaigrette with apple cider vinegar, 40 g of oil, a pinch of salt and ground pepper. Arrange the vegetables and fruit in a serving dish, toss with the vinaigrette and top with the peanuts.
