Sandwich with tuna tartare



From a simple and quick food, the sandwich has taken on a new look in recent years. Selected raw materials, obsessive attention to cooking, intelligent thoughts. Starting with the choices of bread, which differs depending on the filling. And so here is the tuna tartare, with buffalo burrata, cherry tomatoes, lemon zest and basil pesto, which here is made with almonds and not pine nuts, with burrata cheese instead of Parmesan cheese.

INGREDIENTS

tuna tartare
Fresh tomato
Burrata
Caper oil
Basil pesto

Preparation

For the pesto, wash and dry the basil. Put the peppercorns, coarse salt, 1clove of garlic and almonds in a pestle; Pound until a coarse powder is obtained. After adding the basil, continue, initially dry, to mix everything. When the basil is chopped, start adding the oil and a handful of grated cheese: continue to whip with the pestle, alternating cheese and oil, until you get a fluid and pasty pesto. Cut the tuna into high slices and then into cubes. Complete the tuna tartare, adding oil, salt, lemon zest, fresh basil and cherry tomatoes cut into quarters. After heating the sandwich, cut it and, over the entire lower part, spread the burrata and seasoned tartare; On top, add a teaspoon of basil pesto. Close it and it's ready.
