Rigatoni with meatballs
Rigatoni with meatballs in the oven sauce is a first course with unique goodness, a mix of ingredients and flavors that will turn this dish into one of your favorites. Ingredients
500 g Rigatoni300 g Minced meat1 l Tomato puree30 g Pecorino cheeseSaltPepper30 g Parmigiano Reggiano1/2 Onion200 g Smoked baconOlive oilSeed oil
Preparation
Start by preparing the meatballs. Pour the minced meat into a bowl and season with salt, pepper, half grated pecorino cheese and half Parmesan cheese. Knead well with your hands and form meatballs that are not too big. In a saucepan, fry half a finely chopped onion in a base of olive oil. Add the tomato puree and season with salt and pepper and add a tablespoon of sugar if necessary. Cook the tomato puree over medium heat for about 10 minutes. In the meantime, fry the meatballs in plenty of vegetable oil. When they are ready, add the meatballs to the prepared sauce and cook, over low heat, for another 10 minutes. In a non-stick pan, brown the smoked bacon cut into strips and set aside. Cook the rigatoni in plenty of salted water, strain them al dente and handle them with a few ladles of prepared sauce. In a baking dish, pour a ladle of sauce pour half a quantity of pasta and season with the sauce, meatballs and half smoked bacon. Finish the layer with sprinkling of grated cheese. Repeat the operation with the last layer of rigatoni. At this point, bake in a preheated oven at 200°C for about 20 minutes. Remove from the oven and let it rest for about 10 minutes, at this point serve hot!
