Garlic Soup
Chilled garlic soup garnished with sweet grapes is a refreshingly light starter. Garlic soup is a fantastic recipe, I found it in my old cookbook of "In the kitchen with Sister Germana" inexhaustible source of simple and cheap recipes. Garlic soup belongs to the vast array of recipes within everyone's reach and budgets. Do not be intimidated by the main ingredient, I assure you that the flavor of the garlic soup is very delicate and tasty. It should definitely be tried with toasted wholemeal bread croutons!
INGREDIENTS
1 1/4 CUP of milk5 OZ. of sliced almonds3 1/2 OZ. of stale bread1 OZ. of sherry vinegar2 TBSP. of extra-virgin olive oil2 of garlic clovesgreen grapessaltpepper
METHOD
Soak the bread in the milk. Finely chop the almonds; peel the garlic, removing any green shoots, and chop. Peel and de-seed grapes (around 1-1 1/2 cups). In a blender, purée the bread, almonds, and garlic. Add oil, 1 cup chilled water, vinegar, salt and pepper. Place soup in the refrigerator to chill. Once chilled serve the soup garnished with the peeled and de-seeded grapes.
