Fried anchovies
Today I decided to finally make the perfect fried anchovies. Fried anchovies are a special main course or appetizer that is quick to prepare, golden and crispy without eggs in the breading. There are those who prepare them in batter, those who bread them with eggs, those with eggs and breadcrumbs; what I propose is the simplest recipe for fried anchovies there is. After cleaning the anchovies, dip them in flour and finish straight in the boiling oil. A few minutes and they become golden and crispy, to be eaten as they are fried. Fried anchovies are excellent as a main course and also as an appetizer, perhaps served accompanied by plenty of lemons!
Ingredients
500 g anchovies 100 g FlourSeed oilSalt
Preparation
Prepare the fried anchovies first of all by cleaning the anchovies: remove the head, bones and entrails; Wash them under running water and pat them dry with kitchen paper. Dip the anchovies in the flour so as to cover them evenly, shaking off the excess flour. Heat plenty of vegetable oil for frying in a large pot and, when it is hot, dip the anchovies in it. Drain them when they are golden and crispy and place them on paper towels. Add salt to the fried anchovies and serve hot with lemon slices.
NoteAnchovies are part of the category of oily fish, those fish such as sardines, mackerel, garfish characterized by their blue backs but above all by the easy availability in the Sea and considered poor fish due to their low cost. Poor in price but naturally rich in properties, especially Omega 3.
