PROCEDURE
The first thing to do is to cut the red onion into slices, then let it soak inside a bowl filled with a mixture of room temperature water and white wine vinegar for about 15 – 20 minutes. In the meantime, bring the water to a boil in a saucepan, then add the lobster that you have washed under running water earlier. Cover the pot and let it cook for about 10 minutes. Take out the lobster and let it dry, then remove the whole flesh with the help of a chicken chopper. Cut the flesh into slices. On a serving plate, create a first layer of chopped tomatoes, add the lobster and various seasonings, then salt, black pepper and parsley. In a bowl, combine the oil and lemon, mix carefully then pour onto the plate. Finish with the well-squeezed onion and bring to the table!
