Ingredients
350 g flour
1 Egg (large)
1 egg yolk
150 g Butter
80 g Sugar
lemon zest (grated)
1 egg white
Coloured sprinkles
Smarties
Preparation
For the preparation of the carnival biscuit bow ties, prepare the pastry either by hand or with a stand mixer using the K leaf. In the container of the stand mixer, first knead the soft butter together with the sugar, when it has been absorbed add the eggs, always working together the grated peel and the sifted flour. Knead the dough quickly, which must be soft and homogeneous, if you need more flour, add it during processing. Let it rest for about 20 minutes in a cool place. Roll out the dough with a rolling pin into a sheet of the thickness you want. Thick if you want tall, soft cookies, thinner if you want more crumbly cookies. With cutters, or freehand, make the shapes of the bow ties then place them on a baking sheet with parchment paper, or on a non-stick baking sheet. Make small rounded balls with your hands, brush the biscuits with beaten egg white, place the balls in the center and then sprinkle with colored sprinkles and smarties. Decorate according to your taste. Bake the papillon biscuits in a preheated oven at 180°C for about 15-18 minutes, this depends on the thickness you have made. When they are golden brown, take them out of the oven, let them cool and then serve.
