Vegan pancakes



When there's no bread and I don't feel like kneading, it's time for vegetarian savory pancakes with turnip tops, dear friends. A great tasty fallback that everyone in the family likes, they are quick and easy, let's try it together? Usually when you hear the word pancakes you think of a sweet breakfast, today instead we will use them for lunch or dinner instead of bread but I assure you that, loving savory, even at breakfast I don't mind them because they are excellent!

Ingredients

For the pancakes

200 gr. flour
300 ml whole milk
100 gr. whole eggs (about 2)
1 teaspoon of baking powder
salt to taste
A good pinch of ground black pepper
Half a kg. turnip greens
A clove of garlic
A pinch of hot chili powder
A drizzle of extra virgin olive oil

Also for the filling

A smoked scamorza cheese
Two red and yellow peppers
A clove of garlic
EVO oil

Preparation

Wash the peppers and cut them into strips after removing seeds and internal white filaments. Sauté them in a pan with garlic and a drizzle of extra virgin olive oil over high heat without a lid for a few minutes and add salt at the end of cooking. Blanch the previously washed turnip greens for two minutes and remove the hard parts. Drain them well and sauté them in a pan with garlic, oil and chilli pepper and let the liquid dry well, then remove the garlic and salt. In a bowl, mix all the ingredients for the pancakes to obtain a fluid batter. Add the warmed turnip greens and shredded ones. In a greased and hot pan, on a small stove over medium heat, pour a ladle of batter at a time, spreading it over the entire surface, when bubbles are created on the surface and small holes, it is time to turn and cook the other side. After preparing all the pancakes, fill with the peppers and the sliced scamorza cheese and put it back in the oven to melt the cheese before serving. The pancakes themselves are quick to prepare because you don't have to wait for the leavening and having the vegetables ready or stuffing only with cheese you can prepare them well in advance and bake at the time of serving. You can also freeze them if you make large quantities and have them ready when needed. They will also be delicious with other fillings to taste of course ... Another quick idea when there's no bread?
