Spaghetti with fried zucchini
Sicilian-style fried zucchini pasta is an easy and delicious dish in its simplicity! The spaghetti is seasoned with zucchini and the oil in which they are fried, strictly extra virgin olive oil! It is a very popular Palermo recipe, especially in the summer season! The peculiarity of this dish lies in the type of zucchini used, it is the white zucchini of Sicily, that is, very light green zucchini of medium-long size, used exclusively for frying! Very sweet, if you haven't done it yet, you have to taste them at the first opportunity!
Ingredients
2 White courgettes (Sicilian)
350 g Spaghetti
Extra virgin olive oil
grated cheese
Salt
Preparation
Trim the courgettes, then peel them very well with a potato peeler and finally cut them into slices of about half a centimeter. Mothers and grandmothers of the past used to scrape them with the blade of a knife, obtaining the same result! In a large, deep frying pan, heat a generous finger of extra virgin olive oil, then fry the zucchini in several times. You will have to arrange only one layer of zucchini so that you can manage the frying in the best possible way. Turn the zucchini a couple of times, browning them very well on both sides, then as they are ready, set them aside on a plate. In the meantime, cook the spaghetti in plenty of salted water. At the end, keep some of the cooking water aside. Once frying, remove half of the oil used, then drain the spaghetti and dip them into the pan with the oil. Season them with most of the fried zucchini, then mix well and add a little pasta cooking water if needed. Place the pasta with the fried zucchini on the plates, then finish with more zucchini and serve with plenty of grated cheese if you like!
