Pumpkin pancakes



Pumpkin pancakes are sweet, fluffy and simple to prepare pancakes that are great for a delicious breakfast on an autumn morning. Fancy a special and delicious breakfast? Pumpkin pancakes are just what we need: delicious, fluffy and easy to prepare. We all know pancakes: they are soft and delicious pancakes, typical of Anglo-Saxon countries, which can be prepared in many different ways. This pumpkin-based version, for example, is perfect for the fall season. Pumpkin is a versatile and delicious ingredient, which gives a sweet and delicate note to many recipes, both sweet and savory. In this case we cooked it in the microwave for a few minutes, but you can also opt for steaming or baking. 

The pancake dough is super simple. We can also prepare it in advance and keep it in the fridge, so in the morning it will only be enough to cook them. Or we can cook them the day before and then heat them in a pan or microwave. Or, again, freeze them. Pumpkin pancakes can be garnished with a little honey or maple syrup and some almonds, or opt for more delicious combinations: for example, melted chocolate or hazelnut cream, but also your favorite jam. Ingredients

150 g pumpkin
150 g flour 
8 g baking powder half a sachet
120 ml milk
1 egg
40 g Brown sugar
Almond slices to taste for garnish
honey to taste for garnish

Preparation

Cut the pumpkin into cubes, put it in a glass bowl and cook it in the microwave for 4 minutes covered with a saucer. Alternatively, we can steam it. Put the egg and brown sugar in a bowl and mix with a whisk. Add the cooked and mashed pumpkin with a fork and stir again. We also incorporate milk. Add the flour, a little at a time, and mix well until you have a smooth, creamy batter without lumps. Finally, add the yeast and mix. Put a drizzle of oil in a non-stick pan and pour three tablespoons of dough. Cook over low heat for about three minutes or until bubbles appear on the surface. Turn the pancake with a spatula and continue cooking on the other side. Let's proceed like this and prepare all the pancakes. Finally, decorate the pancakes as desired. I used almond flakes and honey.
