Italian Pinot Grigio

Fresh, medium bodied with notes of lemon, lime, green apple and honeysuckle. This zesty white wine is as popular as a glass of cold lemonade on a summers day. Rich, complex and refined.

Food Pairing * Oysters, shellfish, feta, Havarti cheese and green salads.

Ingredients

125 g mixed salad
4 radishes
4 walnuts
4 small button mushrooms
2 tablespoons of extra virgin olive oil
1 tbsp apple cider vinegar
Freshly ground black pepper
Sugar
Salt
40 g of Havarti cheese
40 g Gorgonzola cheese

PREPARATION

Wash the salad, pat dry and arrange in serving plates. Wash the radishes, remove the ends and slice them thinly with a potato peeler. Shell the nuts. Clean the mushrooms by removing the earthy part of the stem with the rootlets, brush thoroughly with a stiff-bristled brush and rub with a damp cloth to remove any soil residue. Slice them. Arrange the vegetables on the salad. In a small bowl, mix the oil, vinegar, ground pepper and a pinch of sugar. Season the salad, along with a pinch of salt. Cut the Havarti into cubes, and the gorgonzola into small pieces. Arrange the cheeses on the salad. Serve with triangles of toasted bread.
