How to make tomato soup
The delicious tomato soup is really simple to prepare: cook the chopped tomatoes with onion and garlic, then add the broth and all the other ingredients, one at a time, including a Parmesan zest that will then be eliminated at the end of cooking. Once all the steps have been completed, the mixture will be blended to obtain a soup to be served hot on the table. And to add flavor, don't forget the fresh basil leaves. Ingredients
Tomatoes 500 g
White onion 1
Garlic 2 cloves
Fresh liquid cream 100 ml
Tomato paste 1 tbsp
Parmigiano Reggiano 1 piece
Brown sugar 2 tbsp
Vegetable broth 1
8 g fresh basil leaves
l Extra virgin olive oil 4 tablespoons
Pepper to taste
Salt to taste
Preparation
Start the preparation of the soup by pouring the oil into a container of adequate capacity and adding first the chopped onion and then the garlic also minced. Add the chopped tomatoes and let them soak over medium heat for 5 minutes, then add the brown sugar, which is used to mitigate any acidity of the tomatoes. Then add the tomato paste mixing it with the other ingredients, the broth a little at a time, letting it simmer, and a clean Parmesan zest to give aroma. Finally, add the cream and cook with the lid on for about 30 minutes, then remove the pan from the heat, remove the Parmesan crust and homogenize everything with the help of an immersion blender. Once the operation is complete, distribute the soup on individual plates, seasoning with salt and pepper if necessary, and serve immediately on the table. The tomato soup is ready!
