Smoked prosciutto soufflé 



Form, beauty and elegance, this soufflé knows how to be admired and then conquers everyone with a unique and unmistakable aroma. 

Ingredients

100 g smoked prosciutto
100 g milk
100 g Parmigiano Reggiano 
40 g butter
30 g flour
5 Egg whites
3 Egg yolks
salt
Pepper

Procedure

For the smoked ham soufflé recipe, melt the butter in a saucepan; add the flour, creating a cream; Cook for 2 minutes, then dilute it with milk. Bring to a boil, stirring constantly, and cook until the mixture comes off well from the walls of the pot. Add salt, pepper and off. Let it cool, then add the egg yolks, grated Parmesan cheese and ham cut into strips. Turn on the oven and insert a baking tray with water for the bain-marie: bring everything to 200 ° C. Beat the egg whites firmly, with a pinch of salt, and gently incorporate them into the mixture. Distribute it in 4 soufflé molds greased with butter, filling them for 2⁄3 and bake them, in a bain-marie, for 18 minutes, with the static function. Remove from the oven and serve immediately, accompanying them to taste with sour cream seasoned with a little pepper. Wine pairing: elegant bottle and fragrant bubbles will conquer the palate of your diners, I am talking about the Trento Doc Rotari 40 2013, a savory and velvety mountain Chardonnay, perfect for soufflé.



THE WINE

Trento DOC – 2013 – Rotari

The first edition of 40 years, unique and limited, was created in 2017 (brut Riserva 2011 vintage) to celebrate the 40th anniversary of the Rotari winery. It is produced with the best Chardonnay grapes selected in the estate’s vineyards, located in the hills north of Trento. Here the climatic conditions are unique thanks to the limestone soil of Dolomite origin, the average altitude of about 400 above sea level, and excellent exposure to the sun. The vineyards are caressed by a refreshing alpine breeze that allows the natural preservation of the crunchiness and aromatic intensity of the grapes. For this important anniversary, a liqueur d’expédition made with the ancient recipe of the winery was used. After a great wait that lasted three years, this Rotari 40 Second Edition was born: Brut Riserva 2013 vintae, always produced following tradition. 

TASTING NOTES
Golden with a fine and persistent perlage. The aroma is exquisite, with pleasant hints of citrus that intertwine with notes of nectarine and apricot, leaving room for hints of vanilla and puffs of hazelnut. Very velvety on the palate with. a perfect match between aromas and flavour. Savoury with a long and persistent finish.
