Shrimp with potato cream and raspberry sauce
A simple appetizer to make. You can prepare it in advance, and at the moment cook the shrimp that have a short cooking (2 minutes). Sure that you will make your good impression on every occasion.
Ingredients
12 Prawns
1 Potatoes
125 GR Raspberries
fresh cream to taste
Thyme (or fresh oregano)
Extra virgin olive oil
30 GR Sugar
1 lime
pepper to taste
vodka (or rum) to taste
Procedure
Clean the shrimp. Remove the carapace and the head leaving the last part of the tail then put them to marinate with a little oil, pepper, a pinch of salt, herbs and a few drops of vodka. Peel the potato, cut it into cubes and put it in a non-stick pan with a little water and let it simmer until soft. Then strain it, put it in an immersion blender glass. Blend it with a few tablespoons of cream. Add little by little until it becomes homogeneous and fluid. Season with salt then set aside. In a blender glass, put the raspberries and blend them by immersion. Then pass them in a colander to remove all the seeds. Put the raspberry puree in a pan with the sugar and over very low heat melt the sugar and thicken slightly. Without adding fat, but only with their marinade, put the shrimp in a non-stick pan and, over very low heat, cover and cook for a couple of minutes (it is as if steaming). Then remove them from the pan and drizzle with lime juice. Now you are ready to serve as pictured.
