Chicken skewers with prunes and avocado cream




What a great idea! Take your notebooks and write down this delicious recipe: chicken skewers and prunes and avocado cream. The skewers of chicken and prunes and avocado cream are a delicious second course of meat, with sweet notes given by plums and peaks of flavor conferred by the bacon, to be composed directly on the skewers and accompanied with a fresh avocado cream.

Ingredients

FOR THE CREAM

300 g frozen peas
200 g vegetable broth
150 g low-fat yogurt
2 ripe avocados
1 lemon
1 shallot
extra virgin olive oil
salt

FOR SKEWERS

400 g chicken breast
50 g sliced bacon
20 pitted prunes
extra virgin olive oil
salt
Pepper

Procedure

Peel the shallot, chop it and let it dry gently with a little oil; Add the peas and broth. Cover and cook for about 15 minutes; Let cool, then blend. Crush or blend the pulp of the avocado reducing it to cream; mix it with yogurt and pea cream; Season with lemon juice and zest and salt. Cut the chicken into chunks and season with salt and pepper. Cut the bacon slices in half; Wrap each plum with a strip of bacon. Mount the skewers by skewering alternating plums and chicken nuggets on wet wooden tskewers. Heat a large pan with a veil of oil and roast the skewers on all sides for 8-10 minutes. Wine pairing: it goes well with a vintage red wine, which can be served fresh. I like the Malvasia Nera Moramora 2022 by Cantine Paololeo for its attractive aromas of blackberries, prunes and sweet spices, softness and persistence. Uncork it on 18 °C.



The aroma of Malvasia Nera di Moramora marries slow-cooking ragù. The best embers of meat enhance the structure of the wine. Paired with cold cuts and cheeses, it becomes a guest of great company. It is recommended at 18 ° C in large glasses that favor the maximum olfactory expression.

Tasting note
Intense ruby red color. On the nose it offers small red fruits such as blackberries and mulberries in full ripeness. Hints of dried plums and sweet spices give an enveloping tertiary perception. Long finish, soft and silky tannins.
