Blueberry pie
The simple fresh blueberry pie is a rustic and genuine dessert, rich in fresh fruit and very light. A fruit pie perfect both for breakfast at home or for a tasty snack. It is very easy to prepare and only requires a few ingredients. Blueberries are part of the so-called berries, they grow in mountain areas. They are rich in vitamins A and C, flavonoids and minerals. In the kitchen they are widely used to prepare excellent desserts and spoon desserts, pancakes, to garnish yogurt, creams and ice creams. In cakes, blueberries melt during baking, leaking out their sweet juice and embellishing any type of cake with purplish hues! Let's see the recipe.
INGREDIENTS
2 eggs
110 g sugar
60 ml peanut oil
50 g soft butter
220 g flour
1 sachet of baking powder
1 teaspoon grated lemon peel
150 g blueberries
PREPARATION
In a bowl, beat the eggs with the sugar for at least 5-6 minutes.
Slowly add the seed oil and the melted butter (if you want you can replace the butter with the same amount of oil), then add the flour, lemon and finally the baking powder. Don't worry if the dough is very compact. At the very least, to work it better, add a tablespoon of water. Grease a 20-22 cm mold and transfer the mixture to it. Now decorate the pie on the surface by arranging the blueberries in random order. Bake the pie at 180°C for about 40 minutes. Once ready, let it cool completely and decorate it with powdered sugar.
