Spinach white bean soup

Ingredients
350 gr spinach 200 grams of cannellini beans 50 gr of bacon 1 onion 1 carrot 1 stalk of celery 150 gr of tomato pulp extra virgin olive oil garlic parsley salt
Preparation
Soak the beans overnight. Cut the onion, carrot and celery into small pieces; Then put them to fry in extra virgin olive oil together with the chopped bacon. Add the faglioli and water, then cook over low heat for about two hours. Season with salt and pepper. While the faglioli are cooking, brown the garlic in oil then remove it. Add the tomato and chopped parsley. Clean the spinach and cut into small pieces, then add them to the beans together with the tomato sauce and cook for another 15 minutes.
AdviceIf you use canned cannellini beans, cook the vegetables first and then add the drained beans and cook for about 5 minutes.
