Prepare the garlic and basil fries first by washing the potatoes thoroughly and peeling them with a potato peeler. Cut them first into horizontal slices about 1 cm thick, then into regular sticks in length and size. Let the potatoes soak for half an hour in a bowl full of water so that they release their starch. Then drain them from the water and dry them. Fill a non-stick pan with high edges with oil and when it is hot reaching a temperature of 160 °C dip the chips a few at a time so as not to lower the temperature of the oil that would make them greasy. Cook for about 6-7 minutes, drain on absorbent paper. Heat the oil again (this time at a temperature of 180 °) and dip the chips again a few at a time and cook them until they are golden brown and crispy (3-4 minutes at a time). Drain on kitchen paper. Chop the garlic clove and basil leaves and sprinkle the chips still hot with these aromas and salt. Serve hot fries with garlic and basil.
