🤩🤩Fazzoletti stuffed with Duck, shiitake mushroom, green peas and, creamy demi-glace with Madeira wine and fine herbs🤤🤤



Classic format of fazzoletti that we Italians like so much! By choosing this  pasta you bring taste and quality to your table. In this recipe there is also a creamy demi-glace with Madeira wine and fine herbs.🤤🤤 Madeira wine is named after the Madeira islands in the Atlantic ocean off the coast of Portugal, where the grapes for it are grown. It has a sweet, caramel flavor, but it isn't overpoweringly sweet. There's a smoky, nutty undertone to it as well.

INGREDIENTS

400 gr fazzoletti
250 gr Peas
300 gr shiitake mushrooms
1/4 cup Madeira wine
2 cloves of garlic
Extra Virgin Olive Oil to taste 
Turmeric to taste 
chili pepper to taste 
Salt to taste 

PREPARATION

Put a base of oil in a pan and brown the garlic, chili and turmeric. Add the shiitake mushrooms and Madeira wine sauté over high heat. Add the peas and season with salt. Finally, with the heat off, sauté the pasta in the sauce, taking care to add a little bit of cooking water.
