In this recipe there is also a creamy demi-glace with Madeira wine and fine herbs.🤤🤤 Madeira wine is named after the Madeira islands in the Atlantic ocean off the coast of Portugal, where the grapes for it are grown. It has a sweet, caramel flavor, but it isn't overpoweringly sweet. There's a smoky, nutty undertone to it as well.
INGREDIENTS
400 gr fazzoletti250 gr Peas300 gr shiitake mushrooms1/4 cup Madeira wine2 cloves of garlicExtra Virgin Olive Oil to taste Turmeric to taste chili pepper to taste Salt to taste
PREPARATION
Put a base of oil in a pan and brown the garlic, chili and turmeric. Add the shiitake mushrooms and Madeira wine sauté over high heat. Add the peas and season with salt. Finally, with the heat off, sauté the pasta in the sauce, taking care to add a little bit of cooking water.
