Blueberry coffee cake
Coffee and blueberry cake, the easy and quick dessert to prepare, after cooking the cake keeps very well under a glass bell. The perfect dessert to prepare when you have leftover espresso. Also a dessert that does not require much time in preparation. Maybe prepare it to impress your family at breakfast or to serve a few squares after meals. It is usually prepared with yogurt or chocolate chips, blueberry cake, but I want to surprise you with a different dessert. Here is the perfect recipe to follow.
Ingredients
120 ml coffee2 eggs150 g sugar120 g flour40 g potato starch100 g of seed oil200 g fresh blueberries1 sachet of baking powder
Preparation
To prepare this dessert start preparing the espresso, which you will have to cool well otherwise you can not combine it with the other ingredients. In a large bowl put the eggs and sugar and let it work well, it takes a couple of minutes until you get a light and fluffy mixture. Sift the flour, yeast and starch and mix well, pour into the bowl to which you are going to add the iced coffee, and mix well with the hand or electric whisk. Add the oil and when you notice that the mixture is homogeneous add the blueberries washed and dried (we advise you to put them in the flour so they will not go down to the bottom of the pan during cooking). Mix them well and transfer the dough into an oiled cake mold and bake in a hot oven at 180 C degrees for 40 minutes, take out of the oven but do the toothpick test first, if it comes out dry then turn off. Remove from the oven and serve cut into slices or squares. Enjoy your meal!
