Pasta salad with cheese tortellini, fresh mozzarella, tomato and olives😘
The cold tortellini salad is a tasty idea to transform a dish usually eaten hot, in broth or dry with cream, into a fresh and delicious salad: an unusual summer dish, to try! A first course of fresh pasta, ideal to take on trips out of town or on the beach, perfect for a dinner with friends. The secret to success is the use of fresh cheese tortellini, homemade or purchased: cooked al dente, drained and passed under cold water to stop cooking. There are several types of seasoning that can be used in this recipe, both ready-made and created with your favorite ingredients. Ideal is to prepare it before, so that with a few hours of rest in the refrigerator the ingredients take flavor. A quick and easy recipe, the dressing is prepared in the cooking time of the tortellini, and in a few minutes this delicious pasta salad will be ready: many red tomatoes, mozzarella, green peppers, black and green olives, all seasoned with fresh basil leaves that give the dish a delicious aroma.
Ingredients
400 g tortellini, fresh
150 g cherry tomatoes
100 g black and green olives
150 g mozzarella
two peppers
a few basil leaves
extra virgin olive oil
oregano
a clove of garlic
salt and pepper To taste
Peas
red onion thinly sliced
cheese in cubes or flakes
artichokes or mushrooms in oil, cut
chili powder
Procedure
Wash the cherry tomatoes, divide them in half and put them in the serving bowl; add the washed and shredded basil leaves, mozzarella, olives in half, sliced peppers, dried oregano, crushed whole garlic, salt and pepper, and season everything with oil; Stir and let the sauce flavor until the tortellini are cooked. Cook the fresh tortellini al dente, if you use the peas cook them together with the tortellini; drain everything, cool under running water, and pour the tortellini into the bowl with the sauce; Remove the garlic and stir gently to flavor the pasta. Put the cold tortellini salad in the fridge, covered with plastic wrap, removing it half an hour before serving: a true delight!
