Today I want to offer you a version, which is very close to the original version, of one of the most popular and appreciated dishes. The fried chicken! Fried chicken is a classic American dish that is now popular all over the world, to the point that there are several fast-food chains that offer this dish as a must. Fried chicken was born with the arrival of the Scots in the south of the United States, in fact it is also known as "Southern fried chicken". Women who arrived in the United States as slaves began selling fried chicken in the streets in the early 1700s, but it was still considered a luxury, given the cost of meat. On the plantations of the South, slaves were allowed to keep a few chickens, so this dish continued to be the one of special occasions, until the abolition of slavery, when it spread far beyond the African community throughout the United States and then even outside. 500 g chicken legs252 g buttermilkflour paprika saltgarlic powder (to taste)dried oregano (to taste)peanut oil
Preparation
For the preparation of fried chicken start by mixing the flour with paprika, oregano and garlic powder. Place the wings, thighs and pieces of chicken in a bowl with buttermilk (a by-product obtained by turning cream into butter easily available on the market or in specialized stores). Carefully moisten the chicken, then dip it in the flour and spice mix, taking care that the breading is uniform and compact. Heat the oil in the fryer or, failing that, in a pot to be filled with oil so that you can immerse the chicken completely. When the oil has reached a temperature of 180 °C, or when putting a pinch of breading will sizzle, add the pieces of chicken a little at a time and cook them about 15/20 minutes, taking care to turn them halfway through cooking. Once cooked, place on a sheet of absorbent paper to remove excess oil and enjoy the crispy American fried chicken still hot. Note. Salt can be added at the end of cooking or in the breading (I added it in the breading). The spices to be used can vary according to taste: you can use curry as a mixture of sage, bay leaf and oregano to always mix with flour or even add chili powder. Instead of buttermilk you can also use yogurt, while it would be better to avoid milk that has a different consistency. Another way to bread chicken is to put it with flour in a large freezer bag and shake. If you prefer you can also pass the chicken first in spices and then in flour. I advise you to accompany it with the sauces you prefer. I enjoyed it with homemade mayonnaise and some pickled gherkins thinly chopped. In addition, there are many variations that approach the classic recipe. For example, if you want to add an even more cruncky note you can add, in the breading, pieces of crumbled corn flakes.
