Eggplant parmigiana 



Thinly sliced eggplant with Italian plum tomato sauce and pecorino Romano cheese. When football legend Dan Marino wanted an eggplant parmigiana that wasn’t as heavy, this eggplant Marino was born. This starter is made with thinly sliced eggplant and topped with Italian Plum tomato sauce and hand-grated Pecorino Romano cheese.
