Radicchio Risotto



Radicchio risotto is an absolute explosion of creaminess thanks to the combination parmesan cheese. Yes, it's true! You can make a creamy, delicious risotto with no cream! The risotto with radicchio is a simple risotto to prepare, which as my mom says "shows more" and is delicious and you can also bring it to the table if you have guests for dinner. 

The risotto with radicchio is delicious, creamy and is prepared in a short time with a few simple ingredients. If you want you can also enrich it with nuts or anything else that comes to mind, as a base it is fabulous even with the addition of mushrooms or pumpkin. I prepared the risotto with radicchio in really industrial quantities and then in fact I gave a little bit to my neighbors who I must say that they appreciated a lot. Ingredients

350 g Carnaroli Rice
1red radicchio
80 g Parmigiano Reggiano
1 onion
1 l vegetable broth
Half a glass White wine
Extra virgin olive oil
Salt

Preparation

Wash the radicchio and slice it in a bowl with water, white vinegar and a pinch of salt. Soak it for about 30 minutes. Wash and dry the red radicchio. Slice the red radicchio and rinse it again under water. Finely chop the onion. Put 4 tablespoons of extra virgin olive oil in a large pot and heat them together with the chopped onion. Add the sliced radicchio and cook for a couple of minutes. Add the rice and toast over high heat until it becomes transparent then blend with white wine and let it evaporate. Heat the vegetable broth and keep it warm. Add a little boiling broth and lower the heat. Cook the risotto with radicchio for about 15 minutes with low heat, stirring continuously and adding boiling broth every time it dries too much. When the rice is cooked, turn off the heat, add the butter and grated parmesan cheese and stir vigorously until the butter has melted completely. Serve the risotto with creamy radicchio.

TIPS
If you want you can also put in the sauté a little bacon or speck. You can add dried or fresh mushrooms. You can also add chopped nuts.
