Prawns in peverada sauce 



The prawns and a sauce based on parsley and mint go perfectly together in a recipe with a pungent and intense flavor.

Ingredients 

3 shrimp
60 g fresh chopped parsley
60 g mint
2 cloves of garlic
3 cl vinegar
salt and pepper
1 dl extra virgin olive oil

Procedure

Boil the shrimp in boiling water for a couple of minutes, drain and let cool. Meanwhile, prepare a sauce by crushing in a mortar or blending together the mint, parsley, peeled garlic cloves, vinegar and oil that you will have to pour flush while you work the other ingredients. Once you have a uniform sauce, season with salt and pepper to taste. When the shrimp have cooled, dry them and arrange them on plates, then sprinkle with the previously prepared green sauce and serve with steamed asparagus.
