Fileja pasta, crunchy bacon, porcini mushrooms and some melted pecorino 🤩😍



This is an ideal dish for Sunday lunches or for special occasions not only in autumn. With its rustic and delicate flavor at the same time it remains a dish of sure success at the table, with the advantage that it is very simple to prepare... This fileja pasta is a typical rich and hearty Calabrian recipe. Perfect cold weather comfort food!

If you have never tried fileja pasta and manage to buy it (or make it), do so. This is really is one of the best types of pasta for heavy meat or spicy sauces, especially when the pasta is fresh. I think I do not control myself and point them already on the other side of the store, challenging the gaze of the lady 3 meters from me, who would like to grab the most beautiful. With these porcini mushrooms, however, I prepared a super spaghetti of those to which it is really difficult to say no. Pasta with porcini mushrooms and bacon, ready to prepare it together?

Ingredients

180 g fileja pasta 
250 g porcini mushrooms
120 g bacon
1 garlic clove
salt to taste
parsley to taste
pecorino cheese to taste


Preparation

Cut the bacon into slices not too thin and then into small pieces. Let's transfer it to a pan with a clove of garlic and light the flame. Meanwhile, cut the porcini mushrooms into slices, previously brushed to remove soil residues. When the bacon has lost some of its fat, add the mushrooms and cook for a couple of minutes. Add salt (a little), pepper and parsley. Cook the pasta in plenty of boiling salted water, keeping aside a cup of cooking water. Drain the pasta and sauté it in a pan adding the cooking water set aside. Add the parsley and pecorino cheese to taste. Our pasta with porcini mushrooms and bacon is ready!
