Fettuccine with salmon and fresh rocket on top




Are you planning a lunch or dinner with friends and you don't have time to dedicate yourself to laborious and refined recipes? A good plate of pasta makes everyone agree and I suggest a cold summer dish fast but at the same time tasty and tasty: fettuccine with salmon, rocket and rosé sauce! A riot of flavors and colors in a first course that combines the delicacy of freshly seared salmon in a pan, the sweetness of  the rosé sauce and the strong flavor of rocket... all scented with basil and flavored with the aroma of pink pepper! 

A version that I like very much and that is certainly fresher and lighter. Prepare the fettuccine with salmon, rocket and rosé sauce and you will bring to the table a fresh and appetizing dish ideal for a spring lunch that combines some typical ingredients of the coming summer!

INGREDIENTS

Fettuccine 320 g
Salmon fillet 300 g
Rosé sauce 100 g
Rocket 50 g
Salt to taste
Black pepper 1 pinch
Pink pepper 1 pinch
Extra virgin olive oil 40 g
Basil 8 g

PREPARATION

To prepare the fettuccine with salmon, rocket and rosé sauce, start by cutting the salt, pepper  extra virgin olive oil and fresh basil, chopped. Take the salmon fillet and with a knife remove the skin, trying not to cut away the pulp then using tweezers remove any bones present. Then cut the fillet first into strips and then in chunks of 1x1 cm. Cook the pasta and in the meantime in a pan with a little oil sauté the salmon for no more than 2 minutes per side, then add salt, pink pepper and in the bowl with tomatoes and basil add the rocket. Once the pasta is cooked, pour it into the bowl with the vegetables, mix everything well, finally add the salmon and your fettuccine with salmon, rocket and rosé sauce and are ready to be enjoyed!
