But the only certain and equal thing for all the recipes of the boscaiola sauce is the presence of porcini mushrooms which, however, are often replaced with simple mushrooms. In reality, there is no real original recipe everyone prepares the sauce to the boscaiola according to their family customs for example I follow the recipe of my house, since my children do not like porcini mushrooms, then I replace them with champignon, sometimes I make it red and others I do it with a little tomato, as in this case or I also do it in white that I must say that it is much more appreciated by everyone. I'll tell you right away how I do striped canneroni alla boscaiola.
Ingredients for 4 people
500 g of pasta (I used striped canneroni)
1 pack of mushrooms already sliced
2 sausages
half an onion not very large
half a glass of white wine
oil
salt
1 pack of small cream
grated Parmesan cheese
Procedure
To make pasta alla boscaiola first you have to chop the onion and then let it fry in a large pan with oil, add the crumbled sausages and brown them for a few minutes, season with salt and blend with wine wait for the wine to withdraw a little and then add the mushrooms.
When the mushrooms and sausage are well cooked then let it flavor.
Adjust salt again and then add the cream, stir and mix well and remove from heat. Meanwhile, cook the pasta and once cooked, drain it, keeping aside a glass of cooking water that you might need, and add it to the pan with the sauce. Mix everything well and if it is too dry, dissolve with the cooking water. Sprinkle with Parmesan cheese and enjoy your pasta.
