Spaghettini with shrimp, scallops, clams and mussels
Hello friends, I'll tell you a simple recipe that, if performed with all the correct steps, will be a dish very appreciated and with all the flavor of the sea. I really like mussels and I love to prepare them in many ways.
Sea, sea, sea... Spring is here and you really feel the need for a dish that smells the sea, summer and vacations. Here is a tasty and creamy first course, based on a few ingredients, but of excellent quality. Pasta with scallops, mussels, clams and prawns, a rich first course of seafood very tasty and also quite simple to prepare.
Ingredients
Mussels 500 g
Clams 500 g
Shrimp 200 g
Scallops 200 g
Extra virgin olive oil to taste
Garlic 1 clove
Salt to taste
Oregano to taste
Parsley to taste
Pasta 350 g
Preparation
Soak the clams with water and salt for about 1 hour and then rinse them a few times changing the water each time. Clean the mussels, remove the byssus and wash them by rubbing them together under running water, perhaps with the help of a metal sponge or a knife. Wash the shrimp, remove the head, the shell and remove the black thread that is the intestine. In a pan put the clams, cover with a lid and once they are open put them in a bowl and strain the cooking liquid through a strainer. Do the same thing with mussels. Clean from the shells half mussels and clams and the other half keep it with shells. In the same pan where we opened mussels and clams, heat the oil and garlic, add the scallops, shrimp and leave them just browned, then, salt and a little cooking liquid of the shellfish. Add the mussels and clams both with shell and without and leave to flavor for a few minutes. Meanwhile, cook the pasta in salted water, drain it and pour it into the pan, you can remove for a moment the shellfish with the shells so as to make it easier to freeze the pasta, add a little more of the cooking liquid that we had filtered, chopped parsley and a drizzle of oil, mix well to flavor everything, put the mussels and clams back in the shell, stir and serve.
