INGREDIENTS

SALMON STEAKS 4
FRESH ASPARAGUS 2 bunches
WHITE WINE 1/2 glass
LEMON 1
SHALLOT 1
EXTRA VIRGIN OLIVE OIL
FINE SALT
PEPPER
DILL

PREPARATION

Prepare the salmon slices, remove any bones with tweezers and keep them aside. Wash the asparagus and remove the woodiest lower part, with the help of a knife with a sharp tip. Place them in a baking dish, season with extra virgin olive oil, salt, pepper, then add the wine. Bake in a preheated oven at 200°C for 5 minutes. Once ready, take them out of the oven, add the salmon slices, the lemon cut into slices, the shallot, salt and pepper: continue cooking in the oven always at 200 °C degrees for another 20 minutes. Your baked salmon with asparagus is ready to be served with a spring of dill.

Tip
Cooking times are indicative, because they depend on the size of the salmon fillets: take them out of the oven only when they are golden brown. Dill is among the herbs that best match salmon, but you can also use parsley or basil.
