Giant grilled calamari  



Happy Easter Monday: many Italians go out on this day, to meet and eat with family and friends 😍 menu might vary and is usually abundant; I would not say a no to giant grilled calamari 🤩🤩 Soft and tasty, grilled squid are simple to prepare. With my advice they will remain very tender: try them!

Grilled squid is a light recipe, but it is not said that you can not eat them in any other season of the year. The grilled squid are very easy to prepare, the cooking times are short and if you want you can also serve cold. They are very light, have few calories and satiate a lot, so they are perfect for those on a diet.

When it comes to grilled fish, grilled squid can not miss. Many tend to avoid them because if cooked incorrectly they become chewy but let them tell you: they do not know what they are missing. Grilled squid are delicious, soft and tasty thanks to the aromas used in cooking that are then released with the heat. You can cook them directly on the barbecue grill, taking care that they do not burn, or prepare grilled squid, always using the heat of charcoal. The advantage of this technique is that the heat is released continuously, especially in the case of cast iron plates, allowing you to achieve a more uniform cooking.

Ingredients

1  giant squid
1 clove of garlic
1 lemon
4 tablespoons of extra virgin olive oil 
1 bunch of parsley

Preparation

First clean the squid by removing the entrails, fin and peeling them. Also clean the tentacles by pressing so that the tooth comes out then wash everything under running water and dry them. Insert a large kitchen knife into each squid: it will serve to prevent the cut from penetrating too deeply. With another knife cut the bag with horizontal cuts that will serve to escape the water in the form of steam. Put the chopped oil, lemon juice, parsley and garlic in a bowl and mix well.
Add the squid and tentacles and stir with your hands so as to distribute the seasoning. Heat the grill and begin to cook the tentacles, turning them from time to time, and after about 7 minutes also add the bags. It will only take 5 minutes to get the right degree of cooking and you will notice it because the color will become intense white. Once ready, serve them hot, completing to taste with fresh chopped parsley, a round of raw oil and a splash of lemon juice as well as salt and pepper.
